The influence of addition of papain enzyme and Carboxyl Methyl Cellulose on the textural properties of Tofu

Papain enzyme and carboxyl methyl cellulosa was used in tofu production as coagulant and thickener. Papain enzyme is a protease enzyme that can break proteins.
